First Attempts

Begin your first attempts being Vegan with baking ...

Try your hand at vegan baking today:

Punkinberry Muffin

1 15-ounce can pumpkin
1/2 cup maple syrup
1/2 cup olive oil
2 teaspoons vanilla
1/2 cup tofu, mashed with a fork
1-1/2 cups unbleached white flour
1-1/2 cups whole wheat flour
1 tablespoon plus 2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon cloves
1 cup dried cranberries

Preheat oven to 350 degrees. Lightly coat muffin tin with nonstick cooking spray or use paper liners. Mix pumpkin, syrup, oil, vanilla, and tofu in large bowl. Sift dry ingredients, except cranberries, separately. Add to pumpkin mixture. Stir just until moist. Fold in cranberries. Pour into muffin tin. Bake for 20-25 minutes or until knife inserted in center of one muffin comes out dry. Make 12 large muffins.

Beginnings

The road to Veganism can be long and feel unending. Many people feel they never reach that complete destination yet.

Adopting a Vegan lifestyle for many, is usually not an overnight change. Part of it may be the difficulty of changing how the buy and make food, the other part may be considered the increase expense in food. Some who decide to change to a Vegan lifestyle and have their diet setup can take up to 6 months.

Although some attempt to go vegan previously -- their usual reason is it is humane to animals. Some of their problems may stem from eliminating favorite foods like cheese.

Many times first attempts to go vegan may work for awhile, yet they fall back on eating meat again and it embarasses them.

Ultimately, they may decide to have a serious talk with themselves that alerts them to health issues, like they look awful, feel awful, feel depressed and don't enjoy life.

They may come to conclusion that eating meat and dairy with the associated fear and anger could be what is contributing to their awful feelings. And, decide to re-evaluate their diet.

They make a firm decision to go Vegan, pull their cookbooks out to study and off they go.
